Who’s excited for St. Patrick’s Day? I know plenty of families look forward to this day, but inasmuch as we mamas love to prepare extensively for any parties, we sure love a stress-free food prep so we can enjoy time with our families more.

What I love about this recipe is it takes only 15 minutes to prepare-perfect when you have company on St. Patrick’s Day  or even on a weeknight when you want something homemade. I prepare mine in this cast skillet iron pan to crisp it up and shorten cooking time (as recommended by Barbara of Butter and Baggage, where this recipe comes from).
